The Authentic Buffalo Wings


Buffalo wings have become a party staple. Everyone has their own recipe, but the one and only authentic preparation comes from the Anchor Bar in Buffalo, NY.


Wings and sauce
24 chicken wings (about 4 pounds)
Salt (optional)
Freshly ground black pepper
4 cups vegetable or corn oil
1/4 cup butter or margarine
2 to 5 teaspoons hot sauce
1 teaspoon white vinegar

Blue cheese dip
1 cup mayonnaise
2 tablespoons finely chopped onion
1 teaspoon finely minced garlic
1/4 cup finely chopped parsley
1/2 cup sour cream
1 tablespoon lemon juice
1 tablespoon white vinegar
1/4 cup crumbled blue cheese
Salt and pepper to taste

Cut off tips and separate each wing at the joint. Sprinkle wings with salt and pepper to taste. Heat oil in a deep-fat fryer or large heavy pot. When it is quite hot, add half the wings and cook about 10 minutes, stirring occasionally. When wings are golden brown and crisp, remove them and drain well. Add the remaining wings and repeat the process.

Meanwhile, melt the butter in a saucepan; add hot sauce to taste and vinegar. Pour hot sauce over wings and mix well to cover. Serve with blue cheese dressing and celery sticks.
To make the dip, combine the ingredients and chill for one hour before serving.
