Walkerswood sauteed beef with onions


4 rib eye steaks
1 teaspoon white wine vinegar
4 tablespoons butter or margarine
1 onion, sliced thinly in rings
3 tablespoons dark rum (optional)
For the marinade:
2 tablespoons Walkerswood Traditional Jamaican Jerk Seasoning
2 garlic cloves, crushed
2 teaspoons salt
Freshly ground black pepper, to taste

Most West Indians eat their meat well done, but you should cook this dish to suit your own taste. Mix together the ingredients for the marinade and use to season the steaks. Allow to marinate for at least 2 hours. Melt the butter or margarine in a large skillet and fry the steaks on both sides for about 5 minutes for rare, 8 minutes for medium and 10 minutes per side for well done. Remove, place on a plate and keep warm. Place the onions in the skillet and cook for a few minutes. De-glaze with the rum and then return the steaks to the pan and toss with the onions. Serve with a green salad.
