A Low Country favorite, particularly on New Years Day

Serves 8

1 cup raw cow peas or dried field peas
4 cups water
2 teaspoons salt
1 cup raw rice
4 slices bacon
1 medium onion chopped

Boil the peas in salted water until tender. Fry the bacon with the onion and retain the grease. Combine the peas, 1 cup of pea liquor, raw rice, bacon, grease, and onions in a heavy rice steamer or double boiler and cook for one hour or until the rice is thoroughly cooked.
Whatever you decide to contribute to the holiday table, be sure to pay attention to your presentation. Use your best serving dishes; add colorful garnish, and remember: When the accolades begin, modesty is always the best policy.
