Wahoo Rundown

4-8 ounce wahoo filets (you can substitute snapper or mahi mahi)
Salt and pepper to taste
2 cups flour
Olive oil
1/4 cup roasted red pepper, julienne
1/4 cup scallions, bias cut
1/4 cup fresh tomatoes, small dice
4 tablespoons fresh basil chopped
2 tablespoons fresh garlic, chopped
8 ounces rum
6 ounces white wine
12 ounces coconut milk

Season the fish with salt and pepper, dredge through the flour and remove the excess. Saute the fish in the olive oil until it turns golden brown on one side. Turn files over and sauté for one more minute. Remove pan from the heat and add the rum. Return pan to the stove and carefully ignite to flambé, burning off most of the alcohol. After flame has gone out, add remaining ingredients and place in a 400 degree oven to bake for 18 minutes. Remove and season with salt and pepper to taste.
