Monty’s Mash

First served to Monty Goodman, a horseman and gentleman

2 cups dried apricots, coarsely chopped
2 cups dried cranberries, coarsely chopped
1/4 habanero or Scotch bonnet pepper, finely diced
1 cup sugar
2 cups water

Mix all ingredients together and cook over a medium heat until the water reduces to a glaze. Use as a chutney or relish. Be careful handling the peppers. Wear disposable gloves and keep your eyes away from the work area. Adjust the amount of pepper added to suit your taste.
